Why learn to see as a painter sees? And how?  What is color theory, anyway?

What do you do when the trip you planned turns into a rainy day?  (Maybe paint the colors of rain!  But not in the rain.)  How can you record information that is useful for painting, when conditions aren't conducive to standing around outside with your easel?
